Tsuwano is a small, historic castle town in western Japan. A tributary of the Takatsu River—renowned as Japan’s clearest stream—flows through the town. We use Tsuwano’s natural spring water—known as Tensen (‘heavenly spring’)—along with locally grown premium sake rice, Yamada Nishiki, to brew this sake slowly at low temperatures. It offers an elegant profile with a vibrant aroma and a fruity, refined flavor.
